So its that time, grab your drinks and lets get this party started.

So last we were together, we were waiting for a response from Sparkle Paper Towel Company on their crappy paper towels, to NO AVAIL we are no longer waiting, and we went way past 72 hours, my assumption is they are satisfied being sub par, or a shit performing Company,. And thats ok, in this New Not Free USA, but hubby has learned the difference in my Great Value Paper Towels! and guess what, they are cut right so the whole f*cking rolls are not all over my floor.

Moving right along, I am not a big soup person, but yesterday went in to my Instant Pot (which I absolutely love) and I thought what can I make today?! hmmm, I ended up making what could only be called **Yummy**Taco Soup which if thickened right you could also top Nachos or possibly stuff in a shell, but for now the Soup was perfect, so going to share the recipe. Please let me know if anyone out there is trying any of these, or if there is something you prefer seeing.

Grumpy Godmothers Taco Soup:


1 Tbsp (Avocado) Oil (a high heat oil)

1 lb Ground Beef or Chuck (cooked and drained)

1 cup yellow onion (Chopped)

3 Tbsp Taco Seasoning (from a packet)

Cornstarch Slurry (1 tbsp Cornstarch + 1 tbsp water)

3 cups Beef Stock (unsalted)

1 Cup frozen Corn kernels

1 can 28 oz Crushed Tomatoes

1 can 15 oz can Bush’s Black Beans

2 Tsp Ground Cumin

1-2 Tbsp Red Pepper Flakes

Sea salt and pepper to taste

1-to 1-1/2 cup Jasmine rice (cooked and rinsed)

4-5 oz Shredded Cheddar Cheese

1/2 cup Sour Cream and 1/4 cup Scallions (to top at end)


  1. Set Instant Pot to Saute, heat oil, Add: onion, cook stirring consistently, add beef, cook, stir, when those are cooked thru Add Taco seasoning remember just 3 Tbsp.

2. Stir in Rice, Stock, corn, beans, and tomatoes, Red Pepper flakes, sea salt and pepper and Cumin. Seal Instant Pot.with lid and set steam vent to seal. Change settings to Manual Cook on High Pressure (make sure the warm button is off) Set Timer for 5 minutes. (The Instant Pot will take about 10 mins to build up pressure, before counting down the 5 mins) Carefully release steam valve, open lid, stir, add Cornstarch Slurry. (1 Tbsp Cornstarch + 1 Tbsp water mix) add into soup to thicken a little. divide into about 6 -1 cup bowls, top with Sour Cream, Scallions. Enjoy.
